Microwave Egg Strata

A strata is a type of egg casserole that makes for delicious brunch dish. Croutons crown a cheese, egg and bacon base that’s ready in just one minute in the microwave!

Ingredients

  • Pinch salt
  • ¼ cup ( 60 mL ) whole-grain croutons
  • 1 egg
  • 1 slice extra lean back bacon, chopped
  • 1 tbsp ( 15 mL ) shredded light Cheddar cheese
  • Salsa (optional)

Instructions

  1. Sprinkle salt in bottom of microwave-safe mug. Add half of the croutons.
  2. Whisk egg, bacon and cheese with fork in small bowl; pour into mug. Top with remaining croutons. Cover lightly with plastic wrap; place in microwave.
  3. Microwave on High (100% power) until egg is set, about 1 minute. Let stand for 20 seconds before serving. Serve with salsa, if desired.

Notes

To make in a microwave egg cooker: Sprinkle salt in bottom of egg cooker; layer ingredients as directed. Place lid on cooker base, lining up notches; twist to secure. Place egg cooker in microwave. Microwave on High (100% power) until egg is nearly set, about 50 seconds. Let stand for 20 seconds before serving.

For a softer texture, substitute cubed whole grain bread for croutons.

Instead of back bacon, use a slice of Black Forest ham or 2 slices cooked strip or peameal bacon.
