- 3 carrots, peeled and cut into chunks
- ½ head cauliflower, broken up
- 1 head broccoli, broken up
- 2 cloves garlic, chopped
- 2 eggs
- ½ teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 3/4 cups ( 440 mL ) bread crumbs
- oil, for pan-frying (if using)
- honey for dipping
In a food processor, combine all of the veggies, garlic and eggs. Blend until everything is a uniform size.
Add in the bread crumbs and pulse to combine.
Once combined, remove into a small bowl and form small nugget sized shapes.
If frying: Heat oil in a pan to 350°F (180°C). Add nuggets and fry until crispy, approximately 5 – 10 minutes, depending on the desired crispiness.
If baking: Place nuggets on parchment paper and bake at 350°F (180°C) flipping halfway through cooking, about 15 minutes.
Serve with honey or dips of choice.
