  • 2 eggs
  • Pinch pepper
  • 2 tbsp ( 30 mL ) chopped sweet green pepper
  • 1 tbsp ( 15 mL ) minced onion
  • 2 tbsp ( 30 mL ) minced ham
  • 1 medium sub bun or soft roll
  • Ketchup (optional)


  1. Whisk eggs and pepper in small bowl; set aside.
  2. Spray 8-inch (20 cm) non-stick skillet with cooking spray. Heat skillet over medium heat. Add green pepper and onion; cook, stirring frequently, until tender, about 3 minutes. Stir in ham.
  3. Pour in egg mixture. As eggs set around edge of skillet, with spatula, gently lift cooked portions to allow uncooked egg to flow underneath. Cook until bottom is set and top is almost set. Turn omelette over and cook other side, about 1 minute, or cover skillet with lid to finish cooking top of omelette.
  4. Transfer omelette to roll, tucking in edges. Serve with ketchup, if desired.
