Tuscan Poached Egg

Best friends, ham and eggs, together on a slice of toasted focaccia bread. Top with bruschetta and grated Parmesan cheese. 'Bueno'!

  • 1 egg
  • 1 slice focaccia bread
  • 1 slice prosciutto or ham
  • 2 tbsp ( 30 mL ) prepared bruschetta mixture, drained
  • 2 tsp ( 10 mL ) grated Parmesan cheese


  1. Fill saucepan with about 3 inches (8 cm) of water. Heat until water simmers gently. Break cold egg into small dish or saucer. Holding dish just above simmering water, gently slip egg into water. Cook in barely simmering water until white is set and yolk is cooked as desired, 3 to 5 minutes. Remove egg with slotted spoon and drain well on paper towel.
  2. Toast bread; place on serving plate.
  3. Place prosciutto on bread. Place poached egg on prosciutto. Top with bruschetta mixture and cheese.


Parmesan cheese can be shaved instead of grated.
