Ingredients

  • 2 slices whole wheat bread
  • 2 eggs
  • 1 tbsp ( 15 mL ) butter
  • Salt and pepper to taste

Instructions

  1. Using a round cookie cutter or drinking glass approximately 2 ¼ inches (6 cm) in diameter, cut a circle from the centre of both slices of bread. (The bread circles can be cooked along with rest of the bread or reserved for another use.)

  2. Heat a frying pan over medium heat. Add the butter to the pan; once it melts, place the bread in the pan.

  3. If you are making a sunny side up toad in a hole, fry one side of the bread, flip it over, then carefully crack the egg into the hole. Season with salt and pepper. Lower the heat to medium-low. Cook slowly until the bottom of the bread is browned, the egg white is set, and the yolk is cooked as desired.

  4. If you are making an over easy toad in the hole, place the bread in the frying pan. Crack the egg into the hole in the bread. Season with salt and pepper. Cook slowly until the bottom of the bread is browned, the egg white is nearly set and the yolk is just about cooked through. Flip the bread over and cook until the white is set and the yolk is firm.
