Scrambled Eggs with Ham and Cheese

Nothing goes better with scrambled eggs than cheese. Whisk up some eggs adding shredded cheese and chopped ham to the mixture. Cook up these soft, cheesy curds on the stovetop and enjoy with toast for a quick breakfast or brunch.

  • 8 eggs
  • ½ cup ( 125 mL ) milk (1%)
  • 1/8 tsp ( 0.5 mL ) salt
  • 1 cup ( 250 mL ) shredded light Cheddar, Swiss or Monterey Jack cheese
  • ½ cup ( 125 mL ) chopped ham
  • 1 green onion, chopped


  1. Whisk eggs, milk, salt and pepper. Stir in cheese and ham.
  2. Spray large non-stick skillet with cooking spray. Heat skillet over medium-high heat.
  3. Pour in egg mixture and immediately reduce heat to medium. As mixture begins to set, gently move spatula across bottom and side of skillet to form large, soft curds. Cook until eggs are thickened and no visible liquid egg remains.
  4. Sprinkle green onion over top.


Ham can be omitted, or substitute chopped cooked bacon.

Scrambled eggs can be made in the microwave. Whisk 2 eggs, 2 tbsp (30 mL) milk, and a pinch of salt and pepper in microwave-safe bowl. Stir in 1/4 cup (50 mL) shredded cheese and 2 tbsp (30 mL) chopped ham. Cover with plastic wrap, venting one corner. Microwave on Medium High (70% power) for about 1-1/2 minutes, stirring several times during cooking. Let stand for 1 minute before serving.
