Sunny Day Waffle Stack
A fluffy waffle and Canadian Cheddar cheese topped with maple glazed Canadian bacon and a fresh egg, yes please!

- 4 slices peameal bacon, about 10 oz (300 g)
- 2 tbsp ( 30 mL ) pure Canadian maple syrup
- 4 eggs
- Salt and pepper (optional)
- 4 frozen waffles, toasted
- 4 slices Canadian Cheddar cheese, about 3 oz (90 g)
- Fresh chives, for garnish

Set a large, non-stick skillet over medium-high heat; coat well with cooking spray. Cook bacon for 3 to 5 minutes per side or until lightly browned. Brush the maple syrup, on both sides of each slice of bacon. Cook for an additional 1 minute per side or until caramelized. Transfer to a plate and cover with foil.

Wipe out skillet and return to the heat; coat well with cooking spray. Crack the eggs into skillet. Use a rubber spatula to keep the egg whites from running into each other. Cook for 2 to 3 minutes or until egg whites are set and yolks are cooked to desired level of doneness. If using, season with salt and pepper.

Place each toasted waffle on a plate. Top with cheese, bacon and a fried egg. Garnish with chives. Serve immediately.
Notes
Toast waffles, topped with cheese, on a baking sheet in the oven for melted Cheddar.
