Sweet, Sweet Summer: Desserts to Savour That Last Bite of Summer

The month of August marks the beginning of the end of summer vacation, but summer is certainly not over yet! In fact, the summer harvest is in full swing this month. From blueberries, to strawberries, to peaches and more, here we share summer dessert ideas to enjoy that last bite of sweet, sweet summer.

For many, the true taste of summer is biting into a juicy ripe peach at the height of the season. Celebrate peaches as a quintessential summer produce with this Peach, Honey and Almond Omelette, or use fresh peaches in the place of strawberries in this Strawberry Pavlova recipe. You can even enjoy them for breakfast in these creative Peach-Stuffed French Toast Sticks.

Blueberries are also at their peak this month. Enjoy them in these delicate Blueberry Soufflés, or this Blueberry Cake recipe, courtesy of egg farmers Jill and Sharon Thomas. Fresh blueberries also take centre stage in this Blueberry Clafouti, a baked flan-like fruit pie. Try blueberries in this delicious weekend breakfast dish, Lemon Ricotta Hotcakes with Blueberry Syrup.

On the other hand, strawberries are at the end of their harvest this month. Although many people will suggest you should freeze your bounty of fresh strawberries to keep them longer, we have another idea: Strawberries and Cream Canada Day Pops. Not just for Canada Day, these popsicles are a delicious frozen treat, made from fresh strawberries pureéd with sugar and layered with a homemade custard, giving these pops a fun red and white striped appearance. Or, enjoy your strawberries in this tasty shortcake recipe!

Of course there are many other summer berries still to be enjoyed at this time of year, such as blackberries and raspberries. Try out these Lemon and Raspberry Cream Puffs for the perfect end to a delicious summer meal. Use a mix of berries to top this Vanilla Cream Delight or overflowing from a hard meringue shell such as these Citrus Meringues. You can also enjoy fresh berries on top of pancakes or waffles and in Dutch Baby Pancakes––their deflated centres act as the perfect edible berry basket.

Lastly, we see apples coming into season this month. Sautéed sliced apples make a delicious filling or topping for these Finnish Oven Pancakes, or in this easy Apple Pancake. If you really want to impress your kids or guests, try out our Cinnamon Apple Fritters for an amazing treat!
