Quick Ham and Eggs

Who knew a ham and eggs breakfast could be this quick? With just a few ingredients and only 10 minutes of preparation and cook time, you’ll soon be enjoying a ramekin filled with creamy eggs and ham, topped with fresh salsa.

  • 4 eggs
  • 1/8 tsp ( 0.5 mL ) pepper
  • 2 tbsp ( 30 mL ) softened cream cheese, cut into pieces
  • 2 tbsp ( 30 mL ) diced ham
  • 2 tbsp ( 30 mL ) salsa


  1. Spray two 1-cup (250 mL) microwave-safe ramekins or custard cups with cooking spray.
  2. Whisk eggs and pepper in medium bowl. Whisk in cream cheese, then ham. Divide egg mixture evenly between two ramekins.
  3. Microwave on Medium (50% power) until just cooked, about 4 minutes. Let stand for 1 minute.
  4. Invert each ramekin onto individual plate; lift off ramekins. Top each serving with salsa.


Instead of ramekins or custard cups, use mugs.

Instead of salsa, use a bruschetta topping.
