Morning Mug Spinach and Cheddar Frittata

A hot breakfast can be just five minutes away with this frittata. Change up the add-ins to suit your mood or use whatever veggies are in the fridge. Bonus: The clean-up is a breeze!

  • 2 eggs
  • Pinch each salt and pepper
  • ½ cup ( 125 mL ) baby spinach, chopped
  • 2 tbsp ( 30 mL ) shredded Cheddar cheese
  • 1 tbsp ( 15 mL ) chopped green onions


  1. Grease large mug with non-stick cooking spray; whisk together eggs, salt and pepper. Stir in spinach, cheese and green onions.

  2. Microwave on High for 30 seconds; stir mixture. Repeat twice until eggs are set and uniformly cooked. Let stand for 1 minute before serving.  


Top the frittata with diced avocado and fresh salsa for a tasty garnish.
