Mini Frittata Bites

This recipe is very versatile. As part of a brunch, or as finger food at a cocktail party. It can also be a meal on its own with the addition of soup or salad. Any way you try it, it’s very tasty.

  • 6 large eggs, beaten
  • 3 pepperoni links
  • 1 ball Buffalo mozzarella
  • Ground black peppercorns
  • Kosher salt
  • 2 tbsp (30 mL) chopped chives
  • 1 tsp (5 mL) paprika


  1. Pour beaten eggs into muffin cups.
  2. Add pepperoni and mozzarella pieces.
  3. Season with salt and pepper.
  4. Bake for 15 minutes at 350°F (180 °C).
  5. Take out of muffin tin and sprinkle with chopped chives and paprika.
