Mediterranean Breakfast Bagels

We love teaming up with Dempster’s Bagels to come up with tasty bagel and egg combinations. Try this quick and easy sandwich for a sit-down or grab and go breakfast!

  • 2 DEMPSTER'S Sun-Dried Tomato Bagels
  • 1/4 cup (60 mL) spreadable goat cheese
  • 1/2 cup (125 mL) baby spinach
  • 4 tomato slices
  • 2 eggs
  • Pinch salt, fresh cracked pepper


  1. Toast split bagel halves.
  2. Spread goat cheese over the bottom halves of each bagel.
  3. Top each with spinach and tomatoes
  4. Cook eggs in a non-stick skillet until desired doneness and arrange over tomatoes. Sprinkle with salt and pepper and top with remaining bagel halves to make sandwiches.
