French Toast Fingers

French toast fingers are part dessert, part breakfast and all fun. Classic French toast is made with a hint of citrus and turned into jam sandwiches cut into "fingers". A fun treat for kids in the morning!

Ingredients

  • 4 eggs
  • ½ tsp ( 2.5 mL ) grated orange rind
  • 2 tbsp ( 30 mL ) orange juice
  • ¼ cup ( 60 mL ) low sugar strawberry jam
  • 8 slices whole wheat bread
  • Icing sugar and maple syrup (optional)

Instructions

  1. Whisk eggs, orange rind and juice in small bowl; set aside.
  2. Match four pairs of bread slices. With two slices stacked on top of each other, trim crusts from each pair (reserve crusts for another use or discard). Spread 1 tbsp (15 mL) jam on one slice of each pair; place second slice on top. Cut each sandwich into three even strips. Dip sandwiches into egg mixture, flipping to coat both sides.
  3. Spray large non-stick skillet or griddle or with cooking spray. Heat skillet over medium heat.
  4. Cook sandwiches on both sides until golden brown, about 2 minutes. Dust with icing sugar and serve with of maple syrup for dipping, if desired.

Notes

Instead of using whole wheat bread, use another bread of your choice or use a different type of bread for both the bottom and the top.
