- 6 slices bacon style turkey
- 8 eggs
- 1 cup (250 mL) cream style corn
- 1/2 tsp (2.5 mL) onion powder
- 1/4 tsp (1.25 mL) pepper
Cook bacon in large skillet or in microwave.
While bacon is cooking, whisk eggs in a medium bowl until blended, then whisk in corn, onion powder and pepper.
Remove cooked bacon from skillet; quickly dice, then add to egg mixture.
Pour egg mixture into hot skillet. As mixture sets, gently move spatula across bottom and side of skillet to form large, soft curds. Cook until eggs are thickened, but still soft.
Instead of bacon style turkey, regular bacon can be used.
