- 5 oz ( 145 g ) Oyster meat
- 4 Eggs
- 1 oz ( 30 g ) Chopped green onion
- 2 tsp ( 10 mL ) Cooking oil (canola or vegetable)
- ⅓ tsp ( 2 mL ) Salt
- ⅓ tsp ( 2 mL ) Sugar
- 2 or 3 parsley leaves
Instructions

Bring 3 ½ cups of water to a boil in a small, covered pot. Once boiled, remove from heat.

Soak the oyster meat in hot water for 10 minutes. Remove, then spread it on a cutting board and mince.

In a mixing bowl, add cracked eggs, minced oyster, chopped green onion, salt and sugar, and mix.

Heat wok with cooking oil, pour the egg and oyster mixture in, and sear over low heat for 2 minutes on each side.

Flip onto a plate and garnish with parsley leaves. Serve immediately.
