- 5 egg whites
- 2 cups ( 500 mL ) packed light brown sugar
- ¼ cup ( 60 mL ) jam or jelly of your choice
- 1 cup ( 250 mL ) fresh berries and/or diced fruit
- Fresh mint sprigs
- Icing sugar
Instructions

Preheat oven to 250°F (120°C). Line baking sheet with parchment paper.

Partly fill a medium pot with water. Bring to a simmer over medium-high heat.

Place egg whites and brown sugar in a stainless steel bowl that fits snugly over the pot. Place the bowl over the simmering water. The bottom of the bowl should not touch the water.

Whisk mixture slowly until sugar dissolves, approximately 5 minutes.

Cool mixture for 3 to 5 minutes, then pour into a stand mixer with a whisk attachment.

Starting on low speed and increasing to medium-high as the meringue forms, whisk until stiff peaks form when the whisk is removed from the mixture, approximately 5 minutes.

Dollop 4 to 6 portions of meringue or one large portion on the prepared baking sheet.

Bake until just set, about 1 hour. Turn off oven.

Allow meringues to dry in oven overnight.

The following day, remove meringues from the oven. Top with jam, berries and/or fruit. Garnish with a sprig of mint and a light dusting of icing sugar. Serve immediately. Or wrap well and freeze for up to 2 weeks for a cold and chewy frozen meringue.
