Lobster Devilled Eggs
“You know you’re at a great party when these devilled eggs come out. The addition of lobster is a fresh and special way to dress up a classic appetizer. Try serving these with a round of Caesars and invite me over!”

Ingredients
- 6 Hard boiled eggs, peeled and halved lengthwise
- ½ cup ( 125 mL ) Cooked lobster, chopped into small pieces (reserve 12 small pieces for garnish)
- ¼ cup ( 60 mL ) Mayonnaise
- 1 tsp ( 5 mL ) Dijon mustard
- 2 tbsp ( 30 mL ) Chives, finely chopped
- ½ tsp ( 2.5 mL ) Lemon juice
- Hot sauce
- Salt and pepper

In a small bowl, combine egg yolks, lobster meat, mayonnaise, mustard, chives, and lemon juice; stir until smooth. Season to taste with hot sauce, salt and pepper.

Fill egg whites with yolk mixture, arrange on a platter and garnish with reserved lobster pieces. Serve immediately.
