Open-Faced Egg Sandwich with Hummus and Avocado

This healthy sandwich makes a satisfying morning or afternoon snack.

Ingredients

  • ½ cup ( 125 mL ) hummus
  • 4 whole grain bread slices, toasted
  • 1 ripe avocado, pitted, peeled and sliced
  • ¼ tsp ( 1.25 mL ) chili powder
  • ¼ tsp ( 1.25 mL ) salt
  • ¼ tsp ( 1.25 mL ) pepper
  • 4 hard boiled eggs, peeled and sliced

Instructions

  1. Spread hummus evenly onto each slice of bread; top with avocado slices. Season with chili powder, salt and pepper. Top with egg slices.

Notes

Use your favourite flavoured hummus – try spicy, roasted red pepper or roasted garlic.
