- 2 eggs
- 2 tbsp (30 mL) water
- 1/8 tsp (0.5 mL) pepper
- 2 tbsp (30 mL) pizza sauce
- 5 slices pepperoni
- 3 tbsp (45 mL) shredded part skim mozzarella cheese
Whisk eggs, water and pepper in small bowl.
Spray 8-inch (20 cm) non-stick skillet with cooking spray. Heat skillet over medium-high heat.
Pour in egg mixture. As eggs set around edge of skillet, with spatula, gently push cooked portions towards centre. Tilt and rotate skillet to allow uncooked egg to flow into empty spaces. When eggs are almost set on surface but still look moist, spread pizza sauce over half of omelette.
Top with pepperoni and cheese. Fold unfilled half of omelette over filled half. Cook for a minute, then slide omelette onto plate.
Instead of pepperoni and mozzarella cheese, use your favorite pizza ingredients.
