Peach-Stuffed French Toast Sticks
French toast sticks make great finger food for the kids at breakfast time. Enjoy this peach-stuffed version using whole wheat bread and an easy to make maple cream sauce for dipping. A quick and fun breakfast that’s ready in just 30 minutes.

Ingredients
Maple Cream
- ½ cup ( 125 mL ) fat free sour cream
- 4 tsp ( 20 mL ) maple syrup or table syrup
French Toast Sticks
- 5 eggs
- ¼ cup ( 60 mL ) milk (1%)
- 2 tbsp ( 30 mL ) maple syrup or table syrup
- ½ cup ( 125 mL ) light cream cheese, softened
- ½ cup ( 125 mL ) finely chopped fresh or drained canned peaches
- ½ tsp ( 2.5 mL ) ground cinnamon (optional)
- 8 slices whole wheat bread

Maple Cream

Combine sour cream and maple syrup in small bowl; set aside.
French Toast Sticks

Whisk eggs, milk and maple syrup in large bowl; set aside.

Combine cream cheese, peaches and cinnamon (if using) in another bowl.

Stack 4 slices of bread on top of each other; cut lengthwise into thirds to form 12 sticks. Repeat with remaining 4 slices of bread. Carefully spread cream cheese filling down the centre of 12 sticks leaving a thin border bare around each stick. Press remaining 12 sticks onto cream cheese filling.

Spray skillet with cooking spray. Heat over medium-low heat. Working in batches, dip each stick into egg mixture, coating all sides and absorbing some of the mixture.

Transfer sticks to skillet and cook each side until golden brown. Serve with dollop of Maple Cream for dipping.
