  • 3 large egg yolks
  • 2 tbsp (30 mL)lemon juice
  • 1 tsp (5 mL)lemon zest
  • 1/2 cup (125 mL)extra-virgin olive oil
  • 3/4 cup (175 mL)canola oil
  • 1 tbsp (15 mL)sesame oil
  • 1 garlic clove, minced
  • 1 tbsp (15 mL)ginger, minced
  • 2 tbsp (30 mL)soya sauce
  • 1 tsp (5 mL)hot sauce, such as Sambal Oelek or Sriracha
  • 2 tbsp (30 mL)chopped cilantro

  • Juice of 1/2 orange, about 4 tbsp
  • Large pinch saffron threads
  • 2 tsp (10 mL)orange zest
  • 3 egg yolks
  • 1 garlic clove, minced
  • 1 tsp (5 mL)Dijon mustard
  • 2 tbsp (30 mL)lemon juice
  • 1/2 cup (125 mL)extra-virgin olive oil

  • 1 ripe avocado
  • 2 large egg yolks
  • 2 tbsp (30 mL)pickled jalapenos, minced
  • 1 garlic clove, minced
  • 2 tbsp (30 mL)lime juice
  • 1 tsp (5 mL)lime zest
  • 1/4 cup (60 mL)cilantro
  • 1-2 tsp (5 mL)hot sauce, such as Sambal Oelek or Sriracha
  • 1 cup (250 mL)canola oil
  • Pinch each salt and freshly ground pepper
