extra-old Cheddar cheese, grated

1 cup

250 mL

hash brown potatoes, cooked

Cooking spray

eggs

Extra-old Cheddar cheese, grated, for garnish

Method

Combine cheese and hash brown potatoes. Spray 4 ramekins with cooking spray and divide mixture between them making a nest. Crack 1 egg in each nest. Pierce egg yolk with toothpick or fork. Microwave on MEDIUM (50%) for 5 minutes. Sprinkle with additional shredded cheese. Let stand for 3 to 4 minutes.
