Method
  • Preheat oven to 350°F (180°C).
  • Heat pastry shells on baking sheet in preheated 350˚F (180˚C) oven according to package directions, about 10 minutes.
  • Melt butter in saucepan over medium heat. Add onion; cook, stirring frequently, for 1 minute. Add mushrooms; cook stirring frequently, until onion and mushrooms are soft, about 4 minutes.
  • Whisk in flour; stirring constantly, for 1 minute. Add milk and chicken broth; continue cooking and whisking until mixture thickens. Stir in eggs and ham, if using. Season with pepper. Spoon mixture into pastry shells. Sprinkle poppy seeds over top, if desired.
