Method
- Preheat oven to 350°F (180°C).
- Melt butter in saucepan or skillet over medium heat. Stir in apples. Cover and cook over medium heat, stirring occasionally, until slightly softened, about 5 minutes.
- Spray shallow 1-1/2-quart (1.5 L) baking dish with cooking spray. Combine apples, bread cubes and raisins in dish.
- Whisk eggs, milk, brown sugar, vanilla, cinnamon and nutmeg in medium bowl until sugar is dissolved. Pour over apple mixture. Cover and refrigerate for 2 hours or overnight.
- Bake pudding in preheated 350°F (180°C) oven until knife inserted in centre comes out clean, 45 to 55 minutes. Serve hot, warm or chilled.
Notes
Serve pudding with ice cream and/or maple syrup.
